Solessence Extra Brut

JM Sélèque
Crafted in Pierry, just south of Épernay, this is the signature cuvée of a young grower who farms his vines with real care across the Coteaux Sud d'Épernay. A blend of Chardonnay, Pinot Meunier and Pinot Noir drawn from dozens of tiny plots, it's partly fermented in oak and aged on reserve wines, giving it depth without heaviness. Expect white peach, citrus zest and a gentle brioche note, all carried by a chalky, mouth-watering finish. Barely dosed, so the fruit and minerality do the talking. Brilliant as an aperitif, but equally happy alongside oysters, sushi or a roast chicken.
