Crafted in the Marne Valley by a family estate working its vines biodynamically since the 1990s, this champagne puts Pinot Meunier centre stage. The clay-and-limestone soils of Crouttes-sur-Marne give the grapes real depth, while gentle pressing and ageing on lees for several years build texture and finesse. Expect a golden glow, fine persistent bubbles and aromas of ripe orchard fruit, honey, brioche and a touch of spice. The palate feels round yet lively, with a long, slightly saline finish. Lovely as an aperitif, it also shines alongside roast poultry, creamy cheeses or seafood. A sincere, soulful bottle worth sharing.
