Fabien Coche, a fourth-generation grower, farms his vines with real care on the limestone-rich slopes of the Côte d'Or, picking Pinot Noir by hand when the fruit is perfectly ripe. The 2023 vintage gives you bright red cherry and wild strawberry, a touch of violet, and silky tannins that never get in the way. Gentle extraction and a measured time in oak keep everything fresh and honest. Pour it with roast chicken, charcuterie or a mushroom risotto — or simply enjoy a glass on its own.

Vinification method: Hand harvest, sorting, mostly destemmed grapes, fermentation with indigenous yeasts in temperature-controlled tanks, gentle pigeage and remontage, then ageing for around 12 months in oak barrels (limited proportion of new oak), light fining and filtration before bottling

Maceration: Short cold pre-fermentation maceration followed by roughly 12 to 15 days of vatting at controlled temperature

Colour: Bright ruby red with purple highlights

Bouquet: Fresh red fruits, cherry, raspberry and redcurrant, with subtle floral notes, a touch of spice and a discreet oaky background

Palate: Supple and juicy attack, silky tannins, crunchy red berry fruit, good freshness and a persistent, mineral-tinged finish

Alcohol content: 13% vol.

Soils: Clay-limestone soils with gravel, located on the lower slopes of the Côte de Beaune around Meursault, Auxey-Duresses and Monthélie

Farming: Sustainable viticulture, ploughed soils, manual harvesting, reasoned treatments respecting the vineyard environment
