Crafted in Savoie by Corentin Houillon, a young winemaker raised in the Jura's natural wine tradition, this skin-contact white is all about purity and patience. The grapes come from mountain slopes worked without chemicals, hand-picked and left to macerate on their skins for several weeks, giving the wine its glowing amber hue and gentle grip. Fermentation happens naturally with wild yeasts, ageing takes place in old barrels, and nothing is added — no fining, no filtering, barely a whisper of sulphur. Expect dried apricot, citrus peel, herbs and a saline finish. Pour it with charcuterie, hard cheese or spiced dishes.
