Everything is done by hand, with low yields and a gentle touch in the cellar: slow pressing, fermentation with native yeasts, then ageing in seasoned oak barrels on fine lees. The 2022 vintage gives you a glass full of ripe citrus, white peach and a hint of hazelnut, carried by a lovely saline freshness. Bourgogne Côte d'Or Chardonnay
Fabien Coche farms a handful of plots just outside Meursault, and you can taste that address straight away. The 2023 gives you ripe white peach and citrus, a touch of hazelnut, and that gentle chalky lift you only get from Côte d'Or limestone. Old vines, hand-picked fruit, a slow press and ageing in barrel (very little new oak) keep everything fresh rather than heavy. It's rounded and generous, yet finishes clean and bright. Pour it with roast chicken, creamy risotto or a plate of goat's cheese. Honestly, it drinks like a village wine at a far friendlier price. Drink now or keep three years.
