Pouilly-Vinzelles Les Quarts

La Soufrandière / Bret Brothers
Picture a steep limestone amphitheatre in the south of Burgundy, where old Chardonnay vines dig deep into stony clay. This is biodynamic farming at its most committed, run by three brothers who treat every parcel as its own little world. Hand-harvested, gently pressed, then fermented with native yeasts and aged on fine lees in oak barrels, it comes out taut, saline and wonderfully precise. You'll find white peach, citrus zest, crushed stone and a touch of hazelnut, carried by a long, chalky finish. Drink it now with shellfish or roast chicken, or tuck it away for five to ten years.
