Winemaking: Whole-bunch co-fermentation of red and white grapes, spontaneous native yeasts, no additions, unfiltered, unfined, no or minimal sulphur at bottling

Maceration: Short skin contact of a few days on the red varieties, gentle pressing, then ageing in old large oak casks

Colour: Hazy onion-skin pink to pale copper

Bouquet: Wild strawberry, rosehip, dried herbs, orange peel and a light lactic, cidery lift

Palate: Dry and lively, tangy red-berry fruit, light tannic grip, saline finish with gentle bitterness

Alcohol content: Around 11.5% vol.

Soils: Loess over clay and limestone

Farming: Organic and biodynamic practices, no herbicides, hand-harvested

Ageing potential: 3 to 5 years from bottling
