Bourgogne "Cras" Monopole

Domaine de la Cras / Marc Soyard
Perched on the hillsides just outside Dijon, this estate is farmed by Marc Soyard, a grower who works his vines organically and lets the land do the talking. The limestone slopes here give a white with real tension: think citrus zest, white flowers and a chalky, mouth-watering finish. Hand-harvested Chardonnay, gentle pressing and ageing in barrel bring roundness without masking the freshness you'd hope for from such a singular plot. A monopole, so every bottle comes from one place and one vision. Pour it with goat's cheese, grilled fish or simply on its own — you'll see why collectors chase it.
