A cracking little white from the Jura, made by a producer who does things his own way: minimal intervention, plenty of instinct and zero shortcuts. The Chardonnay grows on the region's classic marl and limestone soils, hand-picked and gently pressed before fermenting with wild yeasts alone. No fuss, no make-up, just a splash of sulphur at most. In the glass you'll find bright citrus, white flowers and a chalky, saline finish that keeps you coming back for another sip. Fresh, textured and hugely drinkable, it's brilliant with grilled fish, hard mountain cheese or simply on its own with friends. A 2023 to open now and enjoy.
