Grape variety: 100% Pinot Noir

Terroir: Clay-limestone soils typical of the Côte de Nuits area, offering excellent drainage and mineral expression. Vines are cultivated with respect for the environment, following organic and biodynamic principles.

Harvest: Manual harvest in small crates to preserve the integrity of the berries. Careful sorting carried out in the vineyard and in the cellar.

Vinification: Traditional vinification in temperature-controlled vats. Partial destemming, gentle extraction through punching down and pumping over. Indigenous yeasts used for fermentation. Maceration period between 15 and 20 days to enhance aromatic complexity.

Aging: 12 to 14 months in French oak barrels, with a proportion of new oak around 20%. Light filtration before bottling, without fining.

Tasting notes: Brilliant ruby colour. Aromas of red berries such as cherry and raspberry, with subtle floral notes of violet and hints of spice and undergrowth. On the palate, fine tannins, balanced acidity, and a silky texture lead to a persistent and elegant finish.

Serving temperature: 15-16°C

Aging potential: Can be enjoyed now for its freshness or cellared for 5 to 8 years to develop tertiary aromas.

Food pairing: Ideal with roast poultry, duck breast, grilled salmon, or soft cheeses such as Brie or Camembert.
