Vinification: Spontaneous fermentation with indigenous yeasts. No added sulphites. Fermentation and ageing take place in old oak barrels to preserve the purity of the fruit. Minimal intervention philosophy.

Aging: Approximately 12 months on fine lees in neutral oak barrels, bottled without fining or filtration.

Tasting notes: Pale golden colour with subtle green reflections. The nose reveals delicate aromas of white flowers, citrus zest, and fresh orchard fruits, underlined by a discreet mineral note. On the palate, the wine is precise and vibrant, with a fine balance between ripe fruit and a taut acidity. The finish is long, saline, and persistent.

Alcohol content: Around 12% vol.

Serving temperature: 10-12°C

Cellaring potential: Can be enjoyed now for its freshness but will develop complexity over 5 to 7 years.
